Goa, India

A sweet fragrance filled the air that gave the impression of hibiscus flowers, sandalwood, cinnamon and marsala spices. Roses entwined around oak trees as rhubarb suggested an earthiness with tobacco and chai tea chests. The palate arrived with a heavy dose of blackcurrant liquorice and spiced dark rum with fermented tea joining brown sugar and cassia bark. A dash of water summoned a delicious combination of galangal, turmeric and cumin seeds as Thai basil merged with scented petals on naan bread. On the palate came green chillies, kaffir lime leaves and coriander seeds to compliment Turkish delight and thick cream before sweet dates and almonds combined on the finish.

A robust and toasty aroma that incorporated buttery shortbread, caramelised oatmeal, brown toast and thick cut sticky malt loaf. Also hints of treacle, tea biscuits and wintergreen with a tang of hessian. Reduction brought freshly baked brown bread, toasted sunflower seeds, mustard oil and orange vitamin tablets. Autumnal, earthy and with sweeter tones of caramel, tamarind and ginger. The neat palate opened with plum and nectarines stewing in Armagnac, charred wood embers, brisket ends and pears poached in dessert wines. Some nut infused chocolate, camphor and pineapple cake. Lots going on! Water brought a nice bitter herbal quality, more toasted nuts, dark boozy fruits and things like spiced damsons, fig paste, plum wine and maple syrup.

From creator Euan Campbell: There’s a beautiful balance to this, which was first matured in bourbon hogsheads before we transferred it to 125-litre oloroso quarter casks that were supplied to us by our partners in Jerez, José y Miguel Martin. After that, we put it back into second fill bourbon barrels that we’d recently emptied, giving it time to relax and marry before bottling. The result is a superb dram with the big, dark and intense flavours you would associate with oloroso sherry maturation, but with the lush tropical notes from the bourbon casks as well.

DESCRIPTION

The scent coming off this sample was dark - chocolate, raisins, plums, black peppercorns, cocoa and coffee beans. On the palate big wood spice at first before the lovely, yet deep sweetness of poached cherries in spiced red wine syrup served with honey crunch granola appeared. With the addition of water, plums took centre stage on the nose with cobbler, baked pudding and a late summer plum cake. Then we unwrapped a chocolate disc from Anthon Berg containing fine marzipan combined with a layer of Madeira-soaked plums coated in rich dark chocolate. Following twelve years in an ex-bourbon hogshead, we transferred this whisky into a 1st fill Spanish oak Oloroso hogshead.

NOTES

Nettle and blackcurrant leaf on the nose shifts to bubblegum and new tennis balls, then dried apricots, tobacco and oak. The palate finds chalky sweets and spearmint gum, then produces toffee bonbons and fly cemeteries, followed by a spicy warmth of ginger and white pepper on the finish. The reduced nose seems to deepen towards hessian bung cloths and dunnage warehouses, but with the beguiling sweetness of heather honey, rum and raisin fudge, coconut biscuits and treacle toffee. The palate now becomes a mouth-watering mixture of juicy peaches and pineapples, toffee, custard tarts and Armagnac with an autumnal herbal, minty finish.

DESCRIPTION

Peaches, apricots and toffee apples converged on a bed of chamomile and lavender to complement the softer fruit notes of poached pears drizzled with condensed cream and a sprinkling of cinnamon. Fresh grassy notes followed onto the palate of green crunchy apples and asparagus fried in butter along with a burst of sweet chilli sauce. Then sticky toffee and fudge encased fennel and aniseed as creamy vanilla custard merged with runny honey. With a dash of water came the fragrance of Turkish delight but now with lemons, gooseberries and blackcurrant jam. Oily textures joined creamy porridge while orange sherbet faded into grape skin and firm oaky tannins.
